INGREDIENTS
1 1/2 kg apples (around 1 kg peeled and cored)
100 g (3/4 cup) margarine
A pinch of cinnamon
For the crust:
1 egg
100 g (1 cup) Fytro Oat Bran
150 g (1 1/5 cups) JOTIS All Purpose Flour
100 g (3/4 cup) margarine
10 g (1/2 cup) Sweet & Balance Tabletop Sweetener
5 g (1 teaspoon) JOTIS Baking Powder
50 ml (1/4 cup) milk, 1.5% fat
A little vanilla essence
For the cream:
500 ml (2 cups) milk, 1.5% fat
1 sachet JOTIS Vanilla Pudding
1 egg
30 g (1 tablespoon) margarine
10 g (1/2 cup)Sweet & Balance Tabletop Sweetener
15 g (2 tablespoons) Cointreau or Grand Marnier
For the icing:
200 ml (1 cup) water
1 ½ g (1 tablespoon) Sweet & Balance Tabletop Sweetener
A little vanilla essence
4 g gelatin sheets
PREPARATION
Preheat the oven at 220οC. Slice the apples and arrange them in a baking pan. Pour over the margarine. Sprinkle with the cinnamon and bake at 220 οC, for 15 minutes. Add all the ingredients for the crust in the mixer bowl and beat, until the dough becomes sticky. Cover with plastic wrap and refrigerate, until cold. Preheat the oven on the convection setting, at 150οC.
For the cream, dissolve the JOTIS Vanilla Pudding in 500 ml milk, add the beaten egg and the remaining ingredients. Place the mixture in a small pot and bring to the boil, stirring continuously. Remove from heat and let it cool down a bit. Roll out the dough with a rolling pin and place in a 26 cm round baking pan, making sure the edges are covered. Add the cream and arrange the apples on top. Sprinkle with cinnamon (optional). Bake in the oven on the convection setting, at 150οC, for 40-45 minutes.
For the icing, in a small pot, place the water, the Sweet & Balance Tabletop Sweetener and the vanilla and bring to the boil. Soak the gelatin sheets, according to the instructions on the packet. Add them to the pot and stir continuously, until they dissolve. Let the mixture cool down and pour over the apple pie.
