INGREDIENTS
For the biscuits
190 g (8 tablespoons) light margarine at room temperature
8 g (1/3 cup) Sweet & Balance Tabletop Sweetener
A pinch of salt
A little vanilla essence
1 egg white
225 g (2 cups) JOTIS All Purpose Flour
For the filling
100 g (5 tablespoons) Sweet & Balance Strawberry Jam
PREPARATION
In a bowl, add the margarine, the Sweet & Balance Tabletop Sweetener , the salt and the vanilla and whisk. Gradually, add the egg white and the flour, mixing with a cake spatula. Line a baking pan with parchment paper. Using a piping bag, shape 40 small round biscuits on the pan. Bake in a preheated oven on the convection setting, at 180οC, for about 15 minutes. When they cool down, spread ½ teaspoon of Sweet & Balance Strawberry Jam on half of the biscuits and cover them up with the other half.
